Mistake: Assuming an Underground Cellar Will be Cool All Year Round
Many people assume that going underground will automatically ensure a cool climate, often it is exactly the opposite. It is necessary to install appropriate temperature controls. MacPhee’s recommend a refrigeration unit rather than air conditioner to maintain the constant low temperature and alleviate humidity issues. Too little or too much humidity can damage the cork and spoil the wine or promote the growth of mould.
Mistake: Not Insulating Your Cellar Correctly
A cellar must be properly insulated with the correct material. Insulating is easy and inexpensive if installed at the beginning of construction, but can be very costly if it has to be corrected or added later.
Mistake: Poor Choice of Door
Great care must be taken with the doors to your cellar to provide an air tight seal; otherwise all the good work is lost. Also, as attractive as it may be, wood is not a good insulator.
